Spinach Strawberry Salad

Spinach Strawberry Salad with Goat Cheese and Pecans.

(Serves 2, takes 15 minutes)

Ingedients:

Salad

  • 1 bag of spinach 
  • 1 1/2 cups of strawberries 
  • 1 cup of pecan halves
  • 2 tbsp brown sugar
  • 2 tbs butter 
  • 1/2 cup crumbled goat cheese

Dressing

  • Balsamic vinaigrette 

Preparation

  • Melt the butter in a small skillet over medium heat. Toss in the pecans and brown sugar. Stir to coat the pecans. Cook over medium heat until the sugar begins to caramelize (about 3 minutes). Put pecans on a baking sheet to cool.
  • Wash and slice the strawberries in halves. 
  • In a bowl layer the spinach leaves, strawberries, goat chsses and pecans. 
  • Lastly, pour balsamic vinaigrette on the salad and enjoy!
