Mom’s Favourite Squash Recipe

Squash pastry on plate

(Makes 18 pieces, takes 30 minutes)


  • 1 pkg. of phyllo pastry, around 8 sheets
  • ½ cup melted butter
  • 4-5 eggs
  • 20 tbsp. granulated sugar
  • 1 cup vegetable oil
  • 1 cup sour cream
  • ½ tbsp. baking powder
  • ¾ cup butternut squash


  • Peel and grade squash (bigger side)
  • Preheat oven to 350 degrees F.
  • In a mixer, beat eggs and sugar on high speed until smooth. Add oil, sour cream and baking powder.
  • Take 1 leaf of phyllo pastry, brush melted butter and repeat until mixture is done.
  • Place 3 leaves over top and arrange grated/shredded squash down the middle of the pastry lengthwise. Fold all leaves lengthwise around the squash and brush with melted butter.
  • Bake in oven until golden brown, about 15 minutes.
  • When cooled, cut into pieces.
  • Place on serving plate and sprinkle with icing sugar or vanilla powder mix.
  • Note: if you have extra mixture, at the end, spread on top of roll before baking.
