Roast Pork Loin Panini

(Serves 4, takes 40 minutes)


  • 1 bone in pork loin
  • 1 tbsp. grape seed oil
  • Salt and pepper to taste
  • 4 Panini style buns
  • 4 tsp. grainy mustard
  • 1 Granny smith apple
  • 4 slices aged cheddar
  • 1 Shallot thinly sliced


  • Preheat oven to 350 degrees F. Heat cast iron pan over medium high heat and add grape seed oil. Season pork loin with salt and pepper and sear in a hot pan until loin is nicely caramelized all over.
  • Flip pork over onto rack (bone side) and place back in oven for 20 minutes per pound, or until it reaches an internal temperature of 150 degrees F. Let pork rest for 15 minutes.
  • Slice Panini bun (or bread of choice) and place 3 nice slices of roasted pork on bottom bun. Top with apple, shallots, and cheddar. Spread grainy mustard on top bun and place on top.
  • Press Panini in press or heat in oven if you don’t have a press, until cheese is melted.
  • Slice on a diagonal and serve along with a fresh market style salad.
