Panzanella Salad


  • 1 1/2 -3/4 cup day old crusty bread
  • 3-4pc ripe tomatoes 
  • 1pc medium red onion (or 1/2 of a large one)
  • 1/2 pc cucumber
  • 2pc garlic (optional)  
  • 4pc anchovies (optional)
  • 10pc basil leaves
  • 1/2 cup olive oil
  • 2 tbsp red wine vinegar or cider vinegar
  • sald and pepper to taste 


  • Cut all vegetables roughly the same size. Any size you perfer will work.
  • Cut/break bread up into similar sized pieces.
  • Chiffonade basil (cut into thin strips).
  • Place vegetables, basil and bread in a large bowl. Season with salt and pepper.
  • Toss with olive oil and vinegar.
  • Adjust seasoning if needed.
